You’ll love this yummy 2-ingredient paleo chicken gravy! It’s so simple that it’s now a staple in my kitchen.
Paleo Chicken Gravy On a Gut-Friendly Diet? Yes!
All you need for this gut-friendly paleo chicken gravy recipe is arrowroot starch and chicken drippings. Arrowroot starch is “a versatile flour that can be used to thicken sauces, stews, and soups,” according to Bob’s Red Mill. “When combined with liquid, it creates a neutral-flavored mixture that can be added to any soup-like recipe.” My go-to is organic boneless, skinless chicken thighs. I love to bake them in the oven for an easy sheet pan meal that is gut-friendly. You can use any chicken in this recipe.
Since I started having issues with candida and small intestinal fungal overgrowth (SIFO), I worked with a functional medicine dietician to reduce the foods in my diet that fed the overgrowth of yeast in my body. This meant going corn-free. According to Boulder Natural Health, “Many people with Candida have food sensitivities. The most common are sensitivities to milk, corn, wheat, yeast, eggs, citrus fruits, and sugar.” This was me. Eliminating corn, gluten (wheat), dairy (milk), processed sugar and yeast made a difference.
The only issue is that cornstarch is often used in a lot of the wholesome, comforting recipes! My solution? Substituting arrowroot starch. Arrowroot is a resistant starch, meaning the body is not able to digest it. Instead, it serves as food for bacteria. If you have an active infection, there is a chance it could feed the bad, but others with yeast issues found that the benefits outweigh the drawbacks in terms of gut health.
Benefits of Arrowroot Starch
Some claim arrowroot can be used to treat IBS and diarrhea, but evidence is limited. According to WebMD, “There is some scientific evidence that arrowroot may help get rid of cholesterol in the body. There isn’t enough information to know how it works for stomach and intestinal problems or other uses.”
With its thickening tendencies, arrowroot starch also a great gluten free flour alternative for baking. I used arrowroot in my gluten free, sugar free thumbprint cookie recipe this past Christmas, and they were a top condender among my taste testers.

Easy 2 Ingredient Paleo Chicken Gravy

2 cups chicken drippings (I used seasoned organic chicken thighs)
1/4 cup arrowroot starch
Directions
- Prepare the chicken according to the recipe. Once it is done, remove from the oven and spoon the chicken drippings into a saucepan.
- Under medium heat, add the arrowroot starch slowly, stirring constantly.
- Stir until combined and it begins to thicken, about 2-3 minutes.
- Remove from heat, and let sit for a few more minutes to continue thickening.
- Stir, then serve!
Notes
- If the gravy gets too thick, add a small amount of filtered water to thin it out.
