These almond butter protein cookies are so easy and are unbelievably sugar-free! Using my favorite bone broth protein powder and only minimal ingredients, these cookies are quick to whip up. They can be modified to add sugar-free chocolate chips or cacao nibs if you’re able to tolerate them.

Why Bone Broth Protein Powder?

According to Cleveland Clinic, “Bone broth has potential gut healing and anti-diarrheal properties. The lining of our gastrointestinal (GI) tract thins over time. There’s some evidence that boosting collagen production helps restore that lining.” And what better way to get your bone broth than in cookie form?!

I have searched far and wide for a dairy-free, sugar-free protein powder that doesn’t bother my gut. The bone broth protein powder I buy from Paleo Valley has 13g of protein per serving. It comes in chocolate, vanilla, and unflavored. I love that this protein powder is made with minimal ingredients and 100% grass-fed beef. According to Healthline, “grass-fed beef offers many benefits, including less total fat, more omega-3 fatty acids, more CLA (a beneficial fat), and higher antioxidants.”

In this almond butter protein cookies recipe, I use the vanilla flavor protein powder since it is sweetened with monkfruit, which is one of the only artificial sweeteners that doesn’t upset my stomach. I always am careful to seek out monkfruit that doesn’t have erythritol, a sugar alcohol. According to Healthline, “Eating a large amount of [erythitol] may cause digestive issues, including nausea. It may also be associated with blood clots.” That’s not at all what we want when we’re trying to make our tummies feel better!

These cookies are great drizzled with melted chocolate or crumbled up and topped with some fresh fruit.

Ingredients

  • 1 cup crunchy almond butter

  • 2 scoops Paleo Valley Bone Broth protein powder, vanilla flavor

  • 1 tsp vanilla extract

  • 1 egg

Directions

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  • In a large bowl, combine all ingredients until a dough forms. If the dough seems dry, add another splash of vanilla.
  • Once all ingredients are combined, use a spoon to scoop dough into balls. Using your hands, roll into 12 small balls and place about an inch apart on the parchment paper.
  • Press into each cookie with a fork, then bake for 10-12 minutes or until golden brown.
