Vegan Sugar Free Sunbutter Cookies

My best friend is vegan, so when she mentioned to me one day that she loves sun butter, I knew what I had to do: find a way to make peanut butter cookies out of sun butter. These vegan sugar free sun butter cookies are so delicious! They melt in your mouth and are perfect to dunk in a glass of almond milk.

What is sun butter?

Sun butter is sunflower seed butter. It’s an amazing allergy-friendly alternative to peanut butter and other nut butter like almond butter. It’s gluten-free and dairy-free. There are many health benefits of sun butter.

“It’s the perfect blend of healthy fats for sustained energy, vitamin E for enhanced immunity, and magnesium to help you thrive,” writes NASM-certified Personal Trainer, Nutrition Coach, and Women’s Fitness Specialist Devan Ciccarelli in an article for RISE.

Sunflower seeds were one of the foods I came back positive for on the food sensitivity test my functional medicine doctor ordered. Since I worked on my gut, I’ve been able to tolerate sun butter again. I do have to watch the quantity I consume it, however. I’ve noticed that too much can be problematic on my tummy.

Dr. Axe explains why. “Though the butter is full of healthy fats, they do come at a caloric price. Be mindful of serving sizes when using sunflower seed butter,” he says. “One tablespoon is one serving. Add two more to that, and you’re looking at almost 200 extra calories. There can be too much of a good thing!”

How to make vegan sugar free sunbutter cookies

This recipe was inspired by bitesofwellness.com and modifed to be sugar free. I used stevia as the sweetener in this recipe. Stevia can be bitter tasting, but my best friend loves it. Another gut conscious alternative is monk fruit. If you go with either sugar alternative, you won’t need as much as regular sugar.

The natural nuttiness of the sunflower seed butter doesn’t require much additional sweetness. These cookies can be made in a single bowl, and are done in 10-12 minutes. Vegan Sugar Free Sunbutter Cookies

Ingredients

  • 1/2 cup sunbutter

  • 1/8 tsp. of stevia, or more to taste

  • 1-2 tbsp water

  • 1/3 cup cassava flour

  • 1 tsp. baking powder

  • 1 tsp. vanilla extract

Directions

  • Preheat oven to 350 degrees. Place parchment paper on a baking sheet.
  • In a bowl, mix all ingredients into a thick batter.
  • Spoon 1 tbsp. of batter, roll into a ball, and add to baking sheet.
  • Flatten cookies with a fork in a crisscross pattern.
  • Bake for 10-12 minutes or until slightly golden.
  • Allow to cool 5 minutes, then move to cooling rack.
